Chicken with ginger and coriander… mmm!!!

Here’s a simple dish which is filled with lots of tasty ingredients. Great with a big glass of white wine- Sancerre’s my favourite
Ingredients:
- Chicken breasts chopped into squares
- Coriander
- Coconut milk
- Garlic
- Ginger (lots of it!)
- Mushrooms chopped
- Basmati rice
- Red Onion
- Coconut milk
- Green peppers chopped
- Courgettes chopped
- Chicken stock
Method:
- Add the rice to boiling water and allow to cook for 15 mins
- Meanwhile fry the onion and garlic
- Add the mushrooms, green peppers and courgettes into the pan and cook until soft
- Add the chicken and cook until golden brown
- Add the chicken stock and coconut milk and allow to heat up and then simmer
- Add the ginger after grating it into small pieces
- After a further 5 mins of cooking add the chopped coriander
- Serve the rice and then add the chicken and sauce
